Hi my name is Julia and I’m a quesoholic. I’m also a guacoholic. But I’m trying to be healthier (#TheStruggleIsReal y’all) haha. Now, I don’t eat super unhealthy and having a mom [also known as my fit-spo] teach me how to eat healthy has been a huge blessing! When I was diagnosed with RA at three she began researching foods + healthy ways to put me in remission. I grew up eating lots of greens and felt a big difference. Buuuut then college rolled around and it was so much easier to just pop a frozen pizza in the oven or drive thru Chick-fil-A for every meal. My body was not too happy with all the icky stuff I was putting in it & after my doc & Jesus convicted me for eating poorly, I asked my momma to teach me her healthy living ways!
Your body is God’s temple and if we are putting junk in His temple, we aren’t glorifying Him! This is something my doctor told me and I was like “okay Julia, seriously. Get it together.” And if I’m being honest with y’all, being Paleo is hard because that means NO grains or dairy. Which I love chips, bread, and cheese…so ya girl is struggling. BUT I’m focusing more on healthier eats, like guac 😉 This recipe is super easy for all ya hungry peeps out there who don’t like cooking for a long time- AKA meeee!
1-2 avocados [depending how much you want to eat]
salt + pepper
1 lime / lime juice
1 tbsp onion
Mix it all together and ta-da, guac-goodness! Add this to your taco, burrito, chips, or spread it on your toast and dip your veggies in it! Now enjoy! What’s your favorite snack? 🙂
